Waffles with blueberries

Whole-Wheat Waffles

Recipe

No need to give up waffles when trying to be healthy. This hearty weekend breakfast is made with wholesome ingredients. Paired with fresh fruit and real maple syrup, it's sure to satisfy.


Ingredients

  • 2 large eggs

  • 1 ¾ cups milk (almond, coconut, buttermilk work well)

  • ¼ oil or melted butter

  • 1 T Honey

  • 2 t vanilla

  • ½ t ground cinnamon

  • ¼ t baking soda

  • 1 ½ cups whole-wheat flour

  • 2 t baking powder

  • Pinch of salt

  • Optional: blueberries

Instructions

  • Preheat waffle iron

  • 2. In large mixing bowl whisk together the eggs, milk, oil, honey, vanilla, cinnamon and baking soda until well combined

  • 3. Add in flour, baking powder and salt – whisk together just until the large lumps disappear

  • 4. Ladle batter onto center of waffle iron. Sprinkle blueberries over batter then close waffle iron

  • 5. Follow directions for your waffle iron to know how long to cook

  • 6. Keep waffles warm until using all batter.

  • 7. Serve with butter and warm maple syrup

Notes

Uneaten waffles can be cooled and placed between layers of parchment paper then put into a zip-lock bag and placed into the freezer.
