Ingredients
3 cups raw sweet potatoes – shredded
1 medium sweet apple, chopped
1 cup fresh pineapple, chopped in tidbit size
¼ cup pecans, chopped (optional or served on top)
¼ cup organic raisins or chopped dates
½ cup mayo (healthy option choice)
1-2 tablespoon raw honey
2 tablespoons fresh lemon juice
1 teaspoon fresh lemon zest
Instructions
Combine all ingredients in a large bowl. Mix well, refrigerate to marinate the flavors.
