Vegan Caesar Salad

Ingredients

Base

  • Romain lettuce – 1 head torn into pieces

  • Green or purple cabbage – sliced thin

  • Avocado slices

Dressing

  • ½ cup olive oil

  • ½ cup water

  • 1 Tbsp Tamari sauce

  • 2-5 cloves of garlic

  • ½ lemon squeezed or 1 T lemon juice

  • 2 dates softened in hot water or 1 Tbsp honey

"Cheesy" Topping

  • 1 cup sunflower seeds

  • 2-4 Tbsp Nutritional yeast (optional)

  • 1 tsp sea salt

  • 1 Tbsp Flax oil

Croutons

  • 2-3 slices of organic bread

Instructions

Dressing

  • Blend all ingredients in a blender.

"Cheesy" Topping

  • Pulse ingredients in a food processor or blender.

Croutons

  • Cube bread slices and toast lightly in the oven.
