Spaghetti Squash Skillet

Recipe

Whether served as the main dish or a side you will love this versatile one skillet vegetable dish


Ingredients

  • 1 T coconut oil

  • 1 onion chopped

  • 3 cloves garlic chopped

  • 1 medium spaghetti squash

  • ½ red pepper chopped

  • Zest of one lemon

  • Juice of ½ lemon

  • 2 cups chopped fresh kale

  • 1-2 T olive oil

  • Salt and pepper to taste

Instructions

  • Boil or steam whole spaghetti squash in large pot/steamer for 30 minutes. Allow to cool. Cut squash in half, either direction is okay. Scoop out seeds and discard.

  • With a fork, scrape out meat of the squash. Set aside.

  • In large skillet, sauté onions, peppers and garlic in coconut oil until tender. Season with salt and pepper.

  • Stir in lemon zest and juice.

  • Add spaghetti squash and mix well.

  • Pour olive oil over mixture and stir well.

  • Add kale, stir and cover for 10 minutes. Stir and serve.

Notes

This is a versatile recipe. Use mushrooms, spinach or add beans.
