
Spaghetti Squash Skillet
Recipe
Whether served as the main dish or a side you will love this versatile one skillet vegetable dish
Ingredients
1 T coconut oil
1 onion chopped
3 cloves garlic chopped
1 medium spaghetti squash
½ red pepper chopped
Zest of one lemon
Juice of ½ lemon
2 cups chopped fresh kale
1-2 T olive oil
Salt and pepper to taste
Instructions
Boil or steam whole spaghetti squash in large pot/steamer for 30 minutes. Allow to cool. Cut squash in half, either direction is okay. Scoop out seeds and discard.
With a fork, scrape out meat of the squash. Set aside.
In large skillet, sauté onions, peppers and garlic in coconut oil until tender. Season with salt and pepper.
Stir in lemon zest and juice.
Add spaghetti squash and mix well.
Pour olive oil over mixture and stir well.
Add kale, stir and cover for 10 minutes. Stir and serve.
Notes
This is a versatile recipe. Use mushrooms, spinach or add beans.
