
Oatmeal Cookies - The Healthier Way!
Recipe
Make these with traditional ingredients or with a few simple changes you will have a wonderful vegan treat. Use organic ingredients wherever possible to optimize healthy benefits.
Ingredients
1 cup coconut oil
1 cup coconut palm sugar
¼ cup organic cane sugar
2 eggs or flax egg
1 t vanilla
1 ½ cups whole wheat flour
1 t baking soda
1 t cinnamon
3 cups oats
1 cup raisins
½ cup chopped pecans or walnuts (optional)
Instructions
Beat oil and sugars until creamy, add eggs and vanilla.
Combine flour, soda, and cinnamon.
Add to wet ingredients and mix.
Add oats, raisins and nuts.
Refrigerate for at least an hour.
Use a small ice cream scoop to drop cookies onto a parchment paper covered cookie sheet.
Bake at 350 for 10-12 minutes
Notes
Mixing in a KitchenAid mixer makes light work of this recipe and lighter, fluffier cookies.
Flax egg makes this recipe completely vegan.
