Oatmeal Cookies - The Healthier Way!

Recipe

Make these with traditional ingredients or with a few simple changes you will have a wonderful vegan treat. Use organic ingredients wherever possible to optimize healthy benefits.


Ingredients

  • 1 cup coconut oil

  • 1 cup coconut palm sugar

  • ¼ cup organic cane sugar

  • 2 eggs or flax egg

  • 1 t vanilla

  • 1 ½ cups whole wheat flour

  • 1 t baking soda

  • 1 t cinnamon

  • 3 cups oats

  • 1 cup raisins

  • ½ cup chopped pecans or walnuts (optional)

Instructions

  • Beat oil and sugars until creamy, add eggs and vanilla.

  • Combine flour, soda, and cinnamon.

  • Add to wet ingredients and mix.

  • Add oats, raisins and nuts.

  • Refrigerate for at least an hour.

  • Use a small ice cream scoop to drop cookies onto a parchment paper covered cookie sheet.

  • Bake at 350 for 10-12 minutes

Notes

  • Mixing in a KitchenAid mixer makes light work of this recipe and lighter, fluffier cookies.

  • Flax egg makes this recipe completely vegan.
