Gluten Free Granola Bar

Try this gluten free healthy granola bar recipe for a naturally sweet, crunchy, and wholesome snack that’s perfect for busy mornings or guilt free treats anytime.


Ingredients

  • 1/3 cup ground raw almonds

  • 1/3 cup ground raw pecans

  • 1/3 cup ground raw cashews

  • 1 teaspoon kosher salt

  • 1/2 cup coconut palm sugar

  • 2 cups gluten free old fashioned rolled oats

  • 2 cups gluten free puffed rice cereal (optional)

  • 4 tablespoons honey or maple syrup

  • 5 tablespoons virgin coconut oil, melted

  • 1/3 cup peanut butter

  • 1 t vanilla

  • 1 t cinnamon

  • 1/2 cup raisins (soaked in warm water 10 minutes and drained) OPTIONAL

Instructions

  • Preheat your oven to 325°F.

  • Line a cookie sheet pan with unbleached parchment paper and set it aside.

  • In a large bowl, place the ground almond, ground pecans, ground cashews, cinnamon, salt and sugar, and stir to combine well.

  • Add the oats and puffed rice cereal - stir to combine all dry ingredients.

  • Combine the honey (or syrup), vanilla, oil and peanut butter - mix to combine well.

  • Add wet ingredients to dry ingredients and mix well - coating all dry ingredients.

  • Add raisins and mix well. OPTIONAL

  • Scrape the mixture onto the prepared baking sheet and spread into an even layer. Pressing mixture with spatula until packed tightly on pan.

  • Place the baking sheet in the center of the preheated oven.

  • Bake for about 25 minutes, or until the bars are evenly golden brown.

  • Remove the baking sheet from the oven and allow the bars cool for 5 minutes before sliding them out on top of the parchment paper and slice into 3 rows of 5 rectangles.

  • Allow to cool completely before separating the bars. They will crisp as they cool, and will hold together well once cool.
