Elderberry Syrup

Recipe

Fight off colds and flu when you make this simple syrup. Can be used to prevent or at the onset of symptoms.


Ingredients

  • 4 cups water

  • 2/3 cup dried black elderberries

  • 2 T fresh chopped ginger or 1 T ground ginger

  • 1 t ground cinnamon

  • ½ t ground allspice

  • ½ t ground cloves

  • ½ to 1 cup local raw honey

Instructions

  • Add all ingredients EXCEPT HONEY into a medium saucepan.

  • Bring to a boil then lower temperature to simmer until liquid has reduced significantly, at least a cup.

  • This may take about 45 minutes to an hour.

  • Remove from the heat and allow to cool.

  • Mash the berries with a flat utensil.

  • Strain berries out over a glass bowl or large measuring cup

  • Add honey and stir well. See note below.

  • Pour syrup into glass bottle or mason jar

  • Store in the refrigerator

Notes

1 cup of honey makes a very sweet syrup. ½ cup is my personal preference. \

Serving size varies according to how long syrup simmers and the amount of honey added but approximately 24-32 oz.

Servings:

Increase daily amount 2-3 times each day as soon as cold or flu symptoms appear. Discontinue increased dose when symptoms have subsided.

Adults – 1 T daily during high exposure season or event

Children – 1 t daily during high exposure season or event
