Baked Oatmeal

Recipe

Whether vegan or not, this baked oatmeal is great right out of the oven or warmed up the next day.


Ingredients

  • 3 cups organic rolled oats

  • ¾ cup coconut palm sugar

  • 2 t baking powder

  • 1 t sea salt

  • 1 t cinnamon

  • 1 t vanilla

  • 2 eggs or flax egg replacement – 1T ground flax seeds mixed with 3T warm water, let sit for 5 minutes

  • ½ cup melted coconut oil

  • 2 cups liquid – non-dairy milk, coconut milk, water or a combination

  • Raisins, nuts, fruit as desired

Instructions

  • Mix all ingredients together.

  • Bake at 350 degrees in greased 9 x 12 glass dish pan for 35-40 minutes.
