
Baked Oatmeal
Recipe
Whether vegan or not, this baked oatmeal is great right out of the oven or warmed up the next day.
Ingredients
3 cups organic rolled oats
¾ cup coconut palm sugar
2 t baking powder
1 t sea salt
1 t cinnamon
1 t vanilla
2 eggs or flax egg replacement – 1T ground flax seeds mixed with 3T warm water, let sit for 5 minutes
½ cup melted coconut oil
2 cups liquid – non-dairy milk, coconut milk, water or a combination
Raisins, nuts, fruit as desired
Instructions
Mix all ingredients together.
Bake at 350 degrees in greased 9 x 12 glass dish pan for 35-40 minutes.
