

Soaking cashews softens them for creamy consistency in recipes. They are different than other nuts that are soaked to improve digestibility.
4 cups chopped cabbage or cauliflower
4 cups chopped broccoli
1 cup sunflower seeds
½ cup chopped chives
1 T chopped fresh dill
1 t each salt and pepper
Dressing
1 cup raw cashews soaked for at least 1 hour
Juice of one lemon (about 2 T)
½ cup water
2 cloves fresh garlic
3 T honey
1 T onion powder
Pinch of cayenne
Mix cabbage, broccoli, sunflower seeds, chives and dill in a large mixing bowl. Season with salt and pepper.
Drain cashews from soaking water.
In a high-speed blender such as a Vitamix blend all dressing ingredients until smooth.
Add more water as needed for desired consistency.
Fold dressing into vegetables. Refrigerate.
Will keep well for several days.
Dressing is delicious as a vegetable dip.
Tip: Cashews are not actually raw since they are heated during their processing to remove the outer shell. When purchasing cashews, the options are usually raw or roasted.
